As part of the PW Challenge, we made some Sherried Tomato Soup last weekend. I also got a new camera! This means I will be able to take and upload pictures of our cooking adventures on my own, without waiting around for Jennie and her camera to be available. Hooray!

And for some reason we needed to take a picture of the old camera using the new camera. It was a whole thing, and it made a lot more sense at the time.

Now, back to tomato soup!

We needed a giant can of tomato juice and some diced tomatoes.

And then some onion, sautéed in an obscene amount of butter. So much butter, that even I was shocked and actually reduced it by about 2 tablespoons.

Add the giant can of tomato sauce to the onions, let it simmer for a few minutes, and add some cream, pepper, and sherry.

In the meantime, we started PW recipe # 2. Marlboro Man’s Favorite Sandwich..

 

Start with onions. Obviously.

Saute them. I know, it’s all sounding very familiar so far, but wait for the next ingredient…

BEEF! We cut some cube steak into strips.

And toss it in the cast iron! Later, we’ll add the onions and a few spices, throw it all together on a sandwich and eat it. Don’t expect pictures of the final product, we were all too excited to eat these to stop for pictures. Trust, me though. They were incredible and I believe they went a long way to redeem the Pioneer Woman’s recipes for Andrew and Jeff  even after the meatloaf debacle.

But we did manage a picture of the rest of the meal! PW’s creamy mashed potatoes in the foreground and the delicious tomato soup is on the back burner.

Well folks, since it’s nearly May, and we’re 4 months in, I thought it best to give a PW Challenge update. As of today, we are 18 recipes in. That’s about 28 %. Which is more than 25%. Which is where one should be, if one was going to divide up the challenge over a year. Which, as you know, we are.

(Please hold while I go write the PW an email. I guess she should know about our plan.)

So 18 of 65 isn’t bad. I think our next plan of attack is to go back and assign some recipes to seasons (for example, cinnamon rolls might be November. Doesn’t November scream CINNAMON!!!!) After that, we’ll simply tackle the next 47 recipes in a civilized manner, i.e. making 3 at a time in an hour and a half because damn it we think we can fit one more in before we shower and go to that fancy party we can’t miss because it’s really important and NO I don’t think anyone will notice you didn’t wash your hair and there is butter in it.

Say hello. C’mon, don’t be shy. It all started when Jeff broke our blender at a pizza night. I don’t know how, I don’t know who else was involved (probably the waffle maker, and maybe the crepe maker, too) but I do know it was shattered.

Golden opportunity to upgrade. Jeff and I went to Costco to replace it, and I begged and pleaded to get the dual blender-food processor. Jeff said yes. I squealed. And here we were.

Look at those potatoes! Hours saved! Amazing!!

And look at the rosemary potatoes. mm mm mm. Another PW down.

Meanwhile, steak with whiskey sauce. For those of you counting, that’s two recipes at once. Delicious.

True conversation:

“Corelyn, do you think it makes us weird that we take so many pictures of raw meat?”
