- 2 cup mixed greens
- 1/2 cup blueberries
- 1/4 cup pistachios
- 1/3 cup ricotta
- 1 tablespoon balsamic vinegar
- 1 teaspoon olive oil
- Toss the mixed greens, balsamic vinegar, and olive oil together.
- Top with blueberries, pistachios, and ricotta.
- If desired, add a protein - perhaps some salmon or chicken.
