CF: Baked Mustard Lemon Fish

January’s main recipe was baked fish. We chose baked mustard lemon white fish, using red snapper from our local farmer’s market.

Prep time: 20 minutes
Cook time: 20 minutes
Oven temperature: 400 degrees
Servings: 1 per 5 oz of fish

Ingredients:

8-10 oz white fish (we used red snapper)
2 lemons
1 tbsp lemon zest
2 tbsp olive oil
2 tbsp melted butter
1/2 tsp sage
3 tsp spicy brown mustard
1/2 tsp minced garlic
salt and pepper to taste

1. Zest two lemons. Juice.
2. Mix all wet ingredients and spices.
3. Create tin foil tent for fish, place fish (scaled, gutted, and optionally filleted) in tent.
4. Pour mixture into tent. Fold tent top over, and place in oven proof casserole dish. Place in oven for 20 minutes.
