Green Ginger Pops | Garlic, My Soul

Popsicle week won’t quit, y’all. These popsicles are basically a smoothie in a popsicle, and I am pretty excited about them. First of all, these are veggie filled, and have turmeric and ginger – can you say cold-busting? Who has had that dreaded summer cold where you sit on your couch, hot because it’s 90 degrees out, and feel like your options are to drink soup, and tea, and hot lemon water, until your face melts off?

Well, no more. Now you can have this cold smoothie and feel good about getting your nutrients too. It’s the perfect after-exercise summer snack, and it’s just sweet enough to feel like a treat, too.

The full recipe is here, but it’s basically coconut milk, spinach, avocado, turmeric, and ginger. I will say these are quite earthy, so if you want a little more sweetness, add the apple sauce. I like my smoothies (and apparently, popsicles) earthy, so I left it without.

Lime Popsicles | Garlic, My Soul

It’s Wednesday, and it’s Popsicle Week, and I’m here to reveal my favorite flavor: lime. Also known as “green color,” I always preferred the green ice pops as a kid. Purple was a last resort if nothing else was left (aka grape) and sometimes I would have a red or pink one (usually strawberry or some berry flavor) but lime was where it was at.

Lemon-lime was also the flavor of the ice pop shaped like a shark that you could get from the ice cream truck that came to Rocky Neck State Beach, where I spent a significant portion of my childhood summer days. There was nothing like a book, a tuna fish sandwich, and a great white shark pop.

I am here to tell you that lime ice pops are some of the easiest to make, and that they taste just like they should, preservatives left out, that is.  The recipe is here, but all you need are limes, honey, and water. And, I’ll be honest with you, I ended up using one drop of food coloring because I just wanted that deep green!

Fudge Pops | Garlic, My Soul

You guys, I have been waiting to write about these for too long. I love, love, love Fudgesicles. I love all things chocolate, so it makes sense that I would want to make them into pop form, right? Luckily these are wicked easy and they are just as good as if you got the premade ones from the store, I promise.

I have so many vivid memories of ice pops + summer evenings that I cannot count them all, but the nostalgia I feel when eating fudge pops is a deep and good one. I feel like it’s dangerous how easy this is, because I always have these ingredients in the house, and because I will eat one every day from now until eternity since I live in the land of the endless summer.

Fudge Pops | Garlic, My Soul

Ingredients:

2 cups milk
2 tbsp cocoa powder
2 tbsp maple syrup
1 cup chocolate chips (dark or regular!)

Directions:

1. Heat milk until warm, not boiling. Remove from heat and whisk in cocoa and maple syrup.
2. Pour milk over chocolate chips, and mix until melted. Whisk well and pour into molds. 3. Freeze until solid, about 5 hours or overnight.

GMS Popsicle Week | Garlic, My Soul

Well you guys, it’s finally here! I have been excited to share this week’s recipes with you for a bit, and now here we are! IT IS POPSICLE WEEK.

Anyone who knows me knows that I LOVE POPSICLES. I try not to eat them too much because #sugar, so I got stuff to make my own a couple summers back and I am obsessed. Basically an ice pop is a smoothie in frozen form, and a smoothie is just fruit and veggies in liquid form, right? So…these aren’t the worst for you. I tried to keep it balanced this week, so there is some added sugar, but it’s summer, so ice pops are basically NEEDED to get through when you don’t have AC and you live in SoCal!

Peaches & Cream Popsicles | Garlic, My Soul

First up today are Peaches & Cream Popsicles. These are made of peaches, yogurt, and coconut milk. They are simple to put together, and they are the perfect after-work or after-dinner treat. Peaches at this time of year are BALLER and they make me smile wide and think of endless dessert possibilities. I am itching to make peach crisp, but for now, these will have to do.

Ingredients

2 medium peaches, roughly chopped
1 peaches, diced
½ cup coconut milk
5 ounces container of plain yogurt

Directions

1. Put your yogurt and milk into the blender, along with a cup of peaches. If you have a crappy blender, like, me, rough chop your peaches first.
2. Pour the liquid into a Pyrex that has a pouring spout (makes it easier when pouring your pops!)
3. Dice the rest of your peaches, then put those in and mix well.
4. Pour into popsicle molds, and let freeze until solid, at least 5 hours or overnight.
