This recipe is pretty loose – use as much as whatever you have to create the perfect salad as a delicious lunch or a side to dinner. Use whatever veggies, berries, cheese, or nuts you have. This combo – fruit, green, nut, cheese – is guaranteed to make everyone happy. And this dressing is delicious, too, on just about anything.
Salad:
strawberries
spinach
cashews (or another nut)
sprouts
burrata
Dressing:
3-4 strawberries (I used 3 large strawberries)
1 tbsp dijon mustard
2 tsp honey
1/4 cup olive oil
1/2 lemon, juice
sprinkle of salt/pepper
