¼ cup flaxseed meal (I use Bob’s Redmill Golden Flaxseed)
½ teaspoon baking powder
1 egg (or 1 heaping tablespoon applesauce)
1. Mix all ingredients in a mug.
2. Microwave on high for 1 minute.
3. Run out the door.
If you have 4 minutes, Ingredients:
¼ cup flaxseed meal
¼ cup almond meal
1 teaspoon baking powder
1 teaspoon coconut oil
2 heaping tablespoons applesauce (I used Trader Joes berry applesauce in this version)
1 small dollop blueberry jam
1. Mix ingredients in a mug.
2. Microwave on high for 2 minutes.
3. Eat in car while attempting to find a podcast as addictive as Serial.
