Ingredients:
Eggplant
Olive oil
Dates
Goat cheese
Directions:
1. Slice eggplant very thinly (or use a mandoline to cut.)
2. Make balsamic vinegar reduction by placing one cup of balsamic vinegar over medium heat until it boils. Once it boils, whisk constantly to prevent it from burning until it’s about one half its original amount.
2. Then cut dates in half and stuff with goat cheese. You’ll need enough dates for each piece of eggplant.
3. Spray eggplant with olive oil and salt, and grill each side for two to three minutes.
4. While grilling, spray with olive oil and salt, then flip, and grill other side for two to three minutes.
5. Once all the eggplant is grilled, wrap each goat cheese stuffed date with a piece of eggplant and secure with a toothpick, then drizzle with balsamic vinegar reduction.
6. Repeat with all dates and eat! Can be eaten hot or cold.
