CF: Veggie Burgers

Prep time: 20 minutes
Cook time: 10 minutes
Servings: 8

Ingredients:

1 can black beans
1 can cannellini beans (white kidney beans)
1 medium red onion
4-6 scallions/green onions
4 cloves garlic
8-12 oz mushrooms
2 eggs
1 cup breadcrumbs
1 tbsp Worcestershire sauce
1 tsp cumin
salt and pepper, to taste

 

Directions:

1. Drain beans. Mash in large bowl with fork or potato masher.
2. Roughly chop onion, green onion, garlic, mushrooms.
3. Pulse vegetables in food processor until minced.
4. Add vegetables to beans. Stir.
5. In a separate bowl, whisk eggs and add spices.
6. Add egg to vegetable/beans. Mix well. Add Worcestershire sauce, mix well.
7. Add breadcrumbs, mix well.
8. Form into patties. Can be frozen or refrigerated for later use.
9. Well ready, take patty and place in oiled pan/cast iron. Let cook on each side for 5-7 minutes, until brown.
10. Serve with salad, on a bun, with avocado, cheese, tomato, sprouts, ketchup, mustard, BBQ sauce, etc.
