February’s other main dish was Roasted Herb Chicken.
Prep time: 10 minutes
Cook time: 1 1/2 to 2 hours
Oven temperature: 375 degrees
Servings: 1 whole chicken
Ingredients:
1 5lb whole chicken
4 tbsp butter
4 tbsp olive oil
1 onion
4-8 cloves garlic
1/2 tsp rosemary
1/2 tsp black pepper
1 tsp salt
2 tsp herbes de Provence with lavender
Directions:
1. Rinse your chicken inside and out with water, and remove any giblets.
2. Melt butter, add olive oil, spices. Chop four cloves of garlic and add to butter and olive oil.
3. Stuff chicken with onion, and keep it decent by closing its legs with some skewers.
4. Rub your mixture all over the chicken. Stick in a roasting pan or dutch oven.
5. Roast at 375 degrees for about 2 hours.
6. Take out and let rest for 15 minutes. Serve with roasted vegetables.
