Butternut Squash Pasta

Oven temperature: 400
Servings: 4-6

Ingredients:

1 butternut squash
6 ounces feta
1 bunch kale
1 avocado
1 pound pasta
Directions:
1. Baked butternut squash (cubed) on baking sheet with some olive oil at 400 degrees for 25 minutes, or until a fork can come out of a cube cleanly.
2. Boil pasta according to package instructions.
3. Reserve an eighth cup of pasta water. Put over heat with one half of the feta to create a sauce.
4. Add pasta, avocado, kale, butternut squash to a bowl. Toss with feta-sauce and the rest of the feta.
