VW Coconut Oil Sugar Cookies

Sugar cookies can be difficult. Roll them too thin and they fall apart. Bake them too long, they crumble and burn. The consistency never seems to work out right. Coconut oil makes these cookies not only hold together, but taste simply delightful!

Prep time: 20 minutes
Cook time: 8 to 10 minutes
Yields: about 2 dozen cookies

Cookie Ingredients:
3/4 cup coconut oil, softened
1 cup white sugar
2 eggs
1/2 teaspoon vanilla extract
2–1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon Kosher salt

Frosting Ingredients: (I halved the recipe)
1 1/2 cups confectioners’ sugar
1/2 cup butter
1/2 teaspoon vanilla extract
2 tablespoons whipping cream
Sprinkles

Cookie directions:
Using a hand mixer or stand mixer, which ever you happen to have available, beat coconut oil and sugar until combined.

Add eggs and vanilla.

Mix in the flour, baking powder, and salt.

Stick dough in the freezer for at least an hour, or in the fridge overnight. I made this dough one night and rolled out the cookies and baked them the following night. It worked out perfectly!

With your oven preheated to 400 degrees F, roll out dough on a floured slip mat. Every recipe says to try to make your cookies 1/4 to 1/2 inch thick. I don’t have the patience to be that precise, so I pretty much eyeballed it and hoped for the best.

It worked out fine! I honestly only make one batch too thin, so I just made sure to cook that one for less time.

Now, for these cookies, I was making very special VW Beetles and old school VW Vans for my car enthusiast coworker Drew. Special thanks to Stacy for buying me these fabulous cookie cutters! I decided to throw in a few California shaped cookies for good measure, and of course because Drew is from the OC!

Bake cookies for 8 to 10 minutes. Add sprinkles to some, and leave some to frost later. While the cookies cool, get to work on some tasty frosting.

Frosting directions:

Break out that hand or stand mixer again. Combine sugar and butter. Mix on low speed for a bit, then amp up to medium speed and continue to beat. Add vanilla and cream. Continue to beat on medium speed until you have achieved a delightfully fluffy frosting consistency.

Spread on cooled cookies, and add more sprinkles, always!
