Ingredients:
3 cups potatoes
2 cups chicken broth
1 cup milk
1/2 cup onion
3 green onions, whites and greens
1/2 cup heavy cream
1/4 tsp fennel
1/4 tsp seasoning salt
1/4 tsp salt
1/4 tsp pepper
1/4 tsp thyme
1/2 cup fresh parsley
Directions:
1. Dice potato, onion, chop green onion.
2. Melt butter in Dutch oven. Add onion, green onion.
3. Add diced potato, broth, and spices.
4. Simmer for 15-20 minutes.
5. Add milk and cream.
6. Blend half of the soup in the blender until smooth.
7. Return to pot. Reheat, stirring and tasting for spices. Enjoy!
