CF: Zucchini bread

Cook time: 40 minutes
Oven temperature: 350
Servings: 2 loaves, 16 slices

Ingredients:

3 eggs
1 cup olive oil
1-2 teaspoons lemon juice (optional)
2 cups grated zucchini (I used four small zucchini.)
1.75 cups sugar
1 ½ cup all purpose flour
1 ½ cup whole wheat flour
2 teaspoons cinnamon
1.5 teaspoons nutmeg
1 tsp coriander
1 teaspoon baking soda
½ teaspoon baking powder
1/2 cup walnuts (optional)

Directions:

1. Turn on oven to 350.
2. Butter your loaf pans.
3. Grate zucchini.
4. Combine dry ingredients in bowl.
5. Put oil, eggs, lemon juice together and mix.
6. Add zucchini.
7. Add dry ingredients until just combined.
8. If desired, add 1/2 cup walnuts.
9. Divide between two loaf pans, and bake for 40 minutes, rotating once at 20 minutes. Toothpick should come out dry: do not over bake, if it looks a little moist that’s great!
