We have a basil plant on our front porch, and ever since Jeff’s green thumb came out, it’s been quite literally taking over, and so I have more basil than I know what to do with!
So last week, after a Costco run left us with tons of mozzarella, I decided a caprese was in order.
Look at this tomato. Though tomatoes and I have had a love-hate relationship lately, I think that this season we may fall deeply, deeply in love.
Slice up your tomato. Eat any that look a little wonky. It’s your duty.
Look at that beautiful, fresh mozzarella. I couldn’t wait to pair it off with tomato and basil and gobble it up.
Layer your tomato, cheese, and basil. Put it on a funny plate if you have one. (Aren’t these so funny?)
Add a second layer. I promise, this’ll make it better.
And add some balsamic vinegar, for kicks.
Cut it in half, if you’re a lady like me and want to keep from shoving the whole thing in your mouth in the kitchen hoping no one walks in, which is most certainly not what I did. Nope!
Go make this today for an appetizer, or dinner, or breakfast, or snack, or dessert, if you must. Just do it.
