Spaghetti Squash Recipe

Spaghetti Squash
Prep time: 15 minutes
Cook time: 55 minutes
Oven temperature: 425, then 375 degrees
Servings: 2-4 (depending on size of squash)

Ingredients:
1 medium spaghetti squash
1 container of grape tomatoes
1 head of broccoli
1 small white onion
2 oz of feta cheese (optional)
ΒΌ lb of cooked bacon (crumbled) or bacon bits (optional)

Directions:

  1. Cut squash in half and preheat oven to 425 degrees
  2. Scoop out center of the squash
  3. Grease baking sheet and bake squash in oven for 35 minutes at 425 degrees
  4. Prep your other vegetables
  5. Remove squash from oven and shred
  6. Mix shredded squash with veggies
  7. Return to squash shells and bake for an additional 15-20 minutes at 375 degrees
  8. Remove from oven and enjoy!
  9. [Optional] When five minutes remain on baking time, add feta and/or bacon and return to oven for remaining time.
