CF: Garlic Ginger Shrimp

Garlic Ginger Shrimp

Prep time: 5 minutes
Cook time: 10 minutes
Servings: 4

Ingredients:

1 pound frozen shrimp, peeled and de-veined
1 tbsp fresh, grated ginger
2 cloves garlic, minced
2 tsp chili powder, or 1/4 tsp cayenne pepper
2 tbsp sesame oil
sesame seeds, as much as you want for a garnish
juice of 2 limes, or 1 large lemon
2 tbsp rice vinegar
2 tbsp white wine
2-3 fresh scallions
salt and pepper, to taste

Directions:

1. Thaw your frozen shrimp in some cold water, remove peels and de-vein if needed.
2. Heat the sesame oil over medium-high heat and saute the chopped garlic until it just starts to brown.
3. Add the grated ginger and shrimp to the pan, Add chili powder and salt and pepper. Let cook until the shrimp starts to turn pink.
4. Combine lime juice, vinegar, and white wine in a separate bowl and add to the shrimp. If shrimp is raw to begin with, let everything simmer on medium-high for about 5 minutes to fully cook the shrimp. If the shrimp is pre-cooked, let entire dish simmer on medium just a few minutes to let the liquid reduce.
5. Add chopped scallions and toss over the heat for about a minute.
6. Sprinkle sesame seeds on top as a garnish, and serve over rice.
