Ingredients
2 chicken breasts
3 cups arugula
5-8 ounces feta cheese
3-4 medium lemons, juiced
1 1/4 cup harvest grains
1/2 cup sundried tomatoes
olive oil
salt/pepper
Directions
1. Cook chicken with olive oil and juice of two lemons.
2. Meanwhile, cook harvest grains according to the package directions.
3. Chop feta.
4. Put arugula in a bowl, wilt using hot harvest grains, add chicken, feta, and sundried tomatoes. Top with juice of two lemons and mix well.
