I love pumpkin soup as much as the next gal, but coming out the other side of the holiday season, I start to experience pumpkin fatigue. Add some saut\u00e9ed garlic, onion and even fresh sage. From there, things get a little more unusual. Add curry powder, cashew butter, and a good helping of fresh grated ginger. Pur\u00e9e it all and be sure to blend well! Read the full recipe below.<\/p>\n<p>The cashew butter adds protein and texture as well as a fullness of flavor, leaving the end result incredibly satisfying. My hesitation with soup is always that it won&#8217;t be filling enough, and I often go for stews or chilis instead. This is the best of both worlds because it&#8217;s filling but not heavily weighed down by cream and butter.<\/p>\n<p>However, the real star is the fresh ginger. One tip: Don&#8217;t be afraid to add a lot of ginger if you&#8217;re planning to serve your soup right away. Hold back a little &#8211; maybe even cut the ginger in half &#8211; if you&#8217;re planning to make your soup ahead of time and serve the next day. The longer this sits, the more the flavors meld together and that ginger becomes stronger and stronger.<\/p>\n<p><a href=\"http:\/\/garlicmysoul.com\/blog\/30-minute-pumpkin-ginger-soup\/pumpkinsoup2\/\" rel=\"attachment wp-att-9390\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-9390\" alt=\"pumpkinsoup2\" src=\"http:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2013\/01\/pumpkinsoup2.jpg\" width=\"800\" height=\"534\" srcset=\"https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2013\/01\/pumpkinsoup2.jpg 800w, https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2013\/01\/pumpkinsoup2-652x435.jpg 652w, https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2013\/01\/pumpkinsoup2-449x300.jpg 449w, https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2013\/01\/pumpkinsoup2-149x100.jpg 149w\" sizes=\"auto, (max-width: 800px) 100vw, 800px\" \/><br \/>\n<\/a><strong>Prep Time:<\/strong> 15 minutes<br \/>\n<strong>Cook Time:<\/strong> 10-15 minutes<br \/>\n<strong>Servings:\u00a0<\/strong>6 &#8211; 8<b><br \/>\n<\/b><\/p>\n<p>4 cups pur\u00e9ed <strong>pumpkin<br \/>\n<\/strong>4 &#8211; 6 cups <strong>chicken broth<br \/>\n<\/strong>1 medium\u00a0<strong>onion<\/strong>, diced<br \/>\n2 cloves\u00a0<strong>garlic<\/strong>,\u00a0minced<br \/>\n2 tsp yellow <strong>curry powder<br \/>\n<\/strong>1 tsp <strong>ground mustard<\/strong><br \/>\n10 &#8211; 12 fresh\u00a0<strong>sage<\/strong> leaves, chopped<br \/>\n1 &#8211; 2 tsp fresh grated\u00a0<strong>ginger<\/strong><br \/>\n1 tbsp\u00a0<strong>olive oil<br \/>\n<\/strong>1 tsp\u00a0<strong>salt<\/strong>, or adjust to taste<br \/>\n1 cup raw\u00a0<strong>cashews<\/strong><br \/>\n1 cup\u00a0<strong>milk<br \/>\n<\/strong><\/p>\n<p><strong>Directions:<\/strong><\/p>\n<p>1. In a large pot or dutch oven, saut\u00e9 the onions and garlic in olive oil for 2 &#8211; 5 minutes.<br \/>\n2. In a food processor or blender, blend the cashews and milk together until smooth and creamy. Add milk to bring to desired thickness. Mixture should still be pourable, but not completely liquid.<br \/>\n3. Add cashew butter and all spices except the fresh ginger to the pot and reduce heat while stirring.<br \/>\n4. Add chicken broth, pumpkin, and fresh ginger and bring to a boil over medium-high heat.<br \/>\n5. Reduce heat and simmer 5 &#8211; 10 minutes.<br \/>\n6.
