This coworker (Hi, C!) happens to be GF, so of course, Becca did some sleuthing and found out he likes strawberry rhubarb pie &#8212; how appropriate, since his birthday is during rhubarb season! So of course, I bought themed wine for the occasion (see above!) and off we went.<\/p>\n<p>The recipe we used was a combination of this <a href=\"http:\/\/www.glutenfreediva.com\/2010\/05\/homemade-gluten-free-strawberry-rhubarb-pie\/\">Gluten Free Diva recipe\u00a0<\/a>and this <a href=\"http:\/\/hungryrabbitnyc.com\/2012\/06\/fresh-strawberry-rhubarb-pie-gluten-free\/\">Hungry Rabbit recipe<\/a>.<\/p>\n<p>We used a Whole Foods gluten free frozen pie crust, and used the following for filling (we used more than this, because we made two pies, but this is for one)<\/p>\n<p>2 1\/2 cups <strong>rhubarb<\/strong>, chopped<br \/>\n2 1\/2 cups <strong>strawberries<\/strong>, hulled and sliced thin<br \/>\n1 1\/4 cup <strong>sugar<\/strong><br \/>\n1\/4 cup <strong>water<\/strong><br \/>\n1\/4 cup <strong>honey<\/strong><br \/>\n1\/4 cup <strong>corn starch<\/strong><br \/>\n<strong>sea salt<\/strong><br \/>\n2 tbsp <strong>orange juice<\/strong>, fresh<br \/>\nzest of one <strong>orange<\/strong><\/p>\n<p><a href=\"http:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2012\/06\/DSC_0012.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-6598\" title=\"DSC_0012\" src=\"http:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2012\/06\/DSC_0012.jpg\" alt=\"\" width=\"800\" height=\"531\" srcset=\"https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2012\/06\/DSC_0012.jpg 800w, https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2012\/06\/DSC_0012-300x199.jpg 300w, https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2012\/06\/DSC_0012-451x300.jpg 451w, https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2012\/06\/DSC_0012-150x100.jpg 150w\" sizes=\"auto, (max-width: 800px) 100vw, 800px\" \/><\/a><\/p>\n<p>Here is the rhubarb that Becca procured from the Whole Foods. Apparently, she had never seen it before, and so had to ask someone. Luckily she got the right thing &#8212; basically something that looks like bright red celery. I have seen it before because my dad likes strawberry rhubarb pie, so I confirmed this indeed was the right ingredient. We ended up making two pies, because we had two crusts. So cut about ten slivers for each lattice (I sliced the rhubarb in half lengthwise.) Brush this with some of your simple syrup mixture. Stick it in the oven for about ten minutes at 450. Get mentally prepared to not eat pie until following day. You can cup the edges if you&#8217;d like, or be like me and leave &#8217;em and then they&#8217;ll burn and your pie won&#8217;t be as pretty as it could of been.
