We used a short cut, because that&#8217;s what was in my pantry, but really, anything would be good in this recipe.<\/p>\n<p>Also while the vegetables are doing their thing, this is a good time to prep the sauce that will coat the pasta and the veg. Ours consisted of 6 ounces of goat cheese, a few handfuls of chopped parsley, s &amp; p, one grated lemon rind, and some olive oil and pasta water.<\/p>\n<p><a href=\"http:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2012\/05\/IMG_5327.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-large wp-image-6042\" src=\"http:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2012\/05\/IMG_5327-1024x768.jpg\" alt=\"\" width=\"584\" height=\"438\" srcset=\"https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2012\/05\/IMG_5327-1024x768.jpg 1024w, https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2012\/05\/IMG_5327-300x225.jpg 300w, https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2012\/05\/IMG_5327-400x300.jpg 400w, https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2012\/05\/IMG_5327-133x100.jpg 133w\" sizes=\"auto, (max-width: 584px) 100vw, 584px\" \/><\/a><\/p>\n<p>Once the pasta is finished, and your vegetables have sauteed for about ten-fifteen minutes (we dropped in some frozen peas at the very end), grab a giant mixing bowl and fold it all together.<\/p>\n<p><a href=\"http:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2012\/05\/IMG_5329.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-large wp-image-6043\" src=\"http:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2012\/05\/IMG_5329-1024x768.jpg\" alt=\"\" width=\"584\" height=\"438\" srcset=\"https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2012\/05\/IMG_5329-1024x768.jpg 1024w, https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2012\/05\/IMG_5329-300x225.jpg 300w, https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2012\/05\/IMG_5329-400x300.jpg 400w, https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2012\/05\/IMG_5329-133x100.jpg 133w\" sizes=\"auto, (max-width: 584px) 100vw, 584px\" \/><\/a><\/p>\n<p>This was a quick, easy recipe with a delicious return. <em>Bon Appetit <\/em>calls for cream, but we thought that goat cheese + lemon rind was a brighter, spring-ier idea, and it worked out perfectly.
