{"id":4275,"date":"2011-12-26T06:30:52","date_gmt":"2011-12-26T14:30:52","guid":{"rendered":"http:\/\/garlicmysoul.com\/blog\/?p=4275"},"modified":"2012-01-17T16:19:50","modified_gmt":"2012-01-18T00:19:50","slug":"brewed-stew","status":"publish","type":"post","link":"https:\/\/garlicmysoul.com\/blog\/brewed-stew\/","title":{"rendered":"Brewed stew."},"content":{"rendered":"<p>You may remember from our previous posts that we occasionally participate in the <a href=\"http:\/\/thedaringkitchen.com\/\">Daring Cooks&#8217; challenges<\/a>, and in November I helped Liz over at <a href=\"http:\/\/onionsandchocolate.wordpress.com\/\">Onions and Chocolate<\/a> prepare a beef stew, but not just any beef stew &#8211; one that was made with lots of red tea.<\/p>\n<p>I must say the stew was delicious, and very different than something I would have thought to do otherwise. Liz made a few changes (such as adding less cinnamon sticks than the recipe called for) that made the flavor more savory rather than sweet, and I must say I liked those changes.<\/p>\n<p><strong>Beef Braised in Rooibos Tea with Sweet Potatoes<\/strong><\/p>\n<p>1\u00bc pounds (600 gm) brisket or stewing beef, trimmed and cut into 2-inch (5 cm) chunks<br \/>\n2 tablespoons (30 ml) (18 gm) (? oz) flour<br \/>\n1 tablespoon (15 m) oil<br \/>\n2 onions, sliced<br \/>\n2 celery stalks, sliced<br \/>\n3 garlic cloves, crushed<br \/>\n1 tablespoon (15 ml) (8 gm) tomato concentrate<br \/>\n5 rooibos tea bags (or 2 tablespoons loose tea leaves)<br \/>\n1 quart (1 litre) just-boiled water<br \/>\n5 tablespoons (75 ml) red wine vinegar<br \/>\n4 strips unwaxed orange peel, pith removed (the peel of about half an orange)<br \/>\n2 cinnamon sticks<br \/>\n2 inches (5 cm) fresh ginger, peeled and sliced<br \/>\n4 small sweet potatoes, peeled and thinly sliced<br \/>\n\u00be cup (175 ml) mild honey
