Otherwise the chocolate loses its temper (hehe..) Gloves keep you from getting really messy, and keep your kitchen (relatively) clean.  <span style=\"text-decoration:underline;\"><a href=\"https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/_External_Import\/garlicmysoul.files.wordpress.com\/2009\/12\/candy-20.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-389\" title=\"Candy - 20\" src=\"https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/_External_Import\/garlicmysoul.files.wordpress.com\/2009\/12\/candy-20.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/a><\/span> Get them as rounded as possible.  <a href=\"https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/_External_Import\/garlicmysoul.files.wordpress.com\/2009\/12\/candy-021.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-398\" title=\"Candy - 02\" src=\"https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/_External_Import\/garlicmysoul.files.wordpress.com\/2009\/12\/candy-021.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/a> To hand dip the truffles, choose a good quality swiss-style milk chocolate.  <span style=\"text-decoration:underline;\"><a href=\"https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/_External_Import\/garlicmysoul.files.wordpress.com\/2009\/12\/candy-21.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-390\" title=\"Candy - 21\" src=\"https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/_External_Import\/garlicmysoul.files.wordpress.com\/2009\/12\/candy-21.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/a><\/span> Always be careful not to overheat the chocolate. Milk chocolate is more delicate than bittersweet; it can overheat quickly. I generally start out with twenty minutes at a 10% power setting. But start watching it with 5 minutes left to go.  As it starts melting, don&#8217;t let the chocolate go over 89 degrees. Similar to before with the bittersweet chocolate, you only want to pop it in the microwave for 1, 2, or 3 second increments toward the end of the heating process. Milk chocolate will overheat more quickly than the bittersweet.  <span style=\"text-decoration:underline;\"><a href=\"https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/_External_Import\/garlicmysoul.files.wordpress.com\/2009\/12\/candy-22.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-391\" title=\"Candy - 22\" src=\"https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/_External_Import\/garlicmysoul.files.wordpress.com\/2009\/12\/candy-22.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/a><\/span> Set up your station, and have one clean hand and one chocolate hand.
