{"id":2280,"date":"2011-10-12T06:30:15","date_gmt":"2011-10-12T13:30:15","guid":{"rendered":"http:\/\/garlicmysoul.com\/blog\/?p=2280"},"modified":"2011-11-10T18:07:52","modified_gmt":"2011-11-11T02:07:52","slug":"an-underutilized-squash","status":"publish","type":"post","link":"https:\/\/garlicmysoul.com\/blog\/an-underutilized-squash\/","title":{"rendered":"An underutilized squash"},"content":{"rendered":"<p>Hello again! \u00a0The recipe that I\u2019ll be sharing today was taught to me long ago by my friend Stef. \u00a0It is an excellent cold weather choice as it will heat your house by way of the extended use of the oven and also lets you enjoy an underutilized vegetable. \u00a0This is also a pretty passive recipe as it just spends a bunch of time in the oven, so it is a good one to whip out when you need to multitask. \u00a0Say, for example, editing your first graduate school paper. \u00a0A medium size spaghetti squash will make about two meals worth of food for a single person or a solid single meal for two people. \u00a0My general rule of thumb is the larger the squash, the more meals I\u2019ll be eating. In any case, the recipe below turned out to be vegan, but it is easily adapted toward non-vegan persuasions, by adding feta (delicious) and\/or bacon (double delicious).<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter\" src=\"https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/_External_Import\/www.garlicmysoul.com\/photos\/var\/resizes\/2011\/Gluten-Free-Cooking\/Step-1-A.jpg?m=1318367594\" alt=\"\" width=\"512\" height=\"341\" \/><\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter\" src=\"https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/_External_Import\/www.garlicmysoul.com\/photos\/var\/resizes\/2011\/Gluten-Free-Cooking\/Step-2.jpg?m=1318367597\" alt=\"\" width=\"512\" height=\"341\" \/><br \/>\n<strong><\/strong><\/p>\n<p style=\"text-align: center;\"><strong>Cut the spaghetti squash in half.<\/strong> \u00a0Carefully. \u00a0The squash is very difficult to cut when it is uncooked, so please don\u2019t hurt yourself. Proceed with caution! \u00a0This is also a good time to start <strong>preheating the oven to 425 degrees<\/strong> (if you believe in that sort of thing&#8230;).<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter\" src=\"https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/_External_Import\/www.garlicmysoul.com\/photos\/var\/resizes\/2011\/Gluten-Free-Cooking\/Step-3.jpg?m=1318367594\" alt=\"\" width=\"512\" height=\"341\" \/><\/p>\n<p>Once your squash is carefully cut in half you\u2019ll want to <strong>scoop out the center<\/strong>, with the seeds and such, with a spoon. \u00a0Feel free to save the seeds and roast them like you would with pumpkin seeds.<\/p>\n<p>&nbsp;<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter\" src=\"https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/_External_Import\/www.garlicmysoul.com\/photos\/var\/resizes\/2011\/Gluten-Free-Cooking\/Step-4.jpg?m=1318367597\" alt=\"\" width=\"512\" height=\"341\" \/> <strong><\/strong><\/p>\n<p><strong>Lightly grease a baking sheet and place the squash flat side down. \u00a0Bake at 425 degrees for 35 minutes.<\/strong><\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter\" src=\"https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/_External_Import\/www.garlicmysoul.com\/photos\/var\/resizes\/2011\/Gluten-Free-Cooking\/Step-5-A.jpg?m=1318367597\" alt=\"\" width=\"512\" height=\"341\" \/><\/p>\n<p>While your squash is roasting,<strong> prep your other vegetables<\/strong>. \u00a0I used grape tomatoes, broccoli, and onion. \u00a0Divide your cut up veggies into two medium bowls or a large bowl if you have one.<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter\" src=\"https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/_External_Import\/www.garlicmysoul.com\/photos\/var\/resizes\/2011\/Gluten-Free-Cooking\/Step-6.jpg?m=1318367600\" alt=\"\" width=\"512\" height=\"341\" \/><\/p>\n<p>Carefully (and with two hands as spaghetti squash is heavy)<strong> remove the squash from the oven<\/strong>. \u00a0At this point I moved the squash halves to a glass baking dish with sides to prevent them from squirming around. \u00a0<strong>Take a fork and rake it back and forth through the squash<\/strong>. \u00a0It should shred easily and will sort of look like spaghetti! \u00a0Be careful to not slice through the skin of the squash and to leave it structurally sound, as you will be putting all the veggies back in the shells to bake for a little longer.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter\" src=\"https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/_External_Import\/www.garlicmysoul.com\/photos\/var\/resizes\/2011\/Gluten-Free-Cooking\/Step-7.jpg?m=1318367601\" alt=\"\" width=\"640\" height=\"426\" \/><br \/>\n<strong><\/strong><\/p>\n<p><strong>Take the newly shredded squash and mix each halve into a bowl with the other veggies <\/strong>(or one large bowl, whatever the case may be).
