If the\u00a0sweet potato casserole is already claimed by another guest at your Thanksgiving soiree, but you still want to bring a root vegetable. Perhaps you&#8217;re like me and prefer your vegetable dishes to be\u00a0a little on the healthier side. Whatever the reason, you can&#8217;t go wrong by giving this carrot and quinoa salad a try at your Thanksgiving table.<\/p>\n<p><a href=\"http:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2014\/11\/DSC_0071.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-15163\" src=\"http:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2014\/11\/DSC_0071-801x1200.jpg\" alt=\"Roasted Carrot &amp; Quinoa Salad\" width=\"800\" height=\"1198\" srcset=\"https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2014\/11\/DSC_0071-801x1200.jpg 801w, https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2014\/11\/DSC_0071-667x1000.jpg 667w, https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2014\/11\/DSC_0071-500x749.jpg 500w, https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2014\/11\/DSC_0071.jpg 2000w\" sizes=\"auto, (max-width: 800px) 100vw, 800px\" \/><\/a><\/p>\n<p>The beauty of this salad is that it makes great leftovers, to be eaten hot or cold!<\/p>\n<p><strong>Ingredients:<\/strong><br \/>1 lb carrots, chopped<br \/>1 medium red onion, quartered<br \/>1 cup red quinoa<br \/>1 cup kale<br \/>1 tbsp balsamic vinegar<br \/>1 tbsp lemon juice<br \/>2 tbsp olive oil<br \/>1 tbsp fresh thyme<br \/>salt and pepper to taste<\/p>\n<p><strong>Directions:<\/strong><br \/>1.\u00a0Preheat oven to 400 degrees.<br \/>2.\u00a0Toss carrots and onions with 1 tbsp olive oil and roast for 30-40 minutes, until onions are translucent and tender. Carrots should be soft but retain some crispness.<br \/>3. Prepare quinoa according to package directions.<br \/>4. When quinoa is fully cooked, add the kale to your pot. Cover, remove from heat and let sit for 2-3 minutes so kale wilts slightly.<br \/>5. Toss quinoa, roasted veggies, kale,with lemon juice, balsamic vinegar, 1 tbsp olive oil and thyme.<br \/>6.
