I am proud to say that for the first time ever, making this pie crust actually didn&#8217;t terrify me. And if came out pretty well!<\/p>\n<p><a href=\"http:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2014\/05\/Chicken_Pot_Pie-6.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-13942\" alt=\"Chicken Pot Pie | Garlic, My Soul\" src=\"http:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2014\/05\/Chicken_Pot_Pie-6-1200x801.jpg\" width=\"800\" height=\"534\" srcset=\"https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2014\/05\/Chicken_Pot_Pie-6-1200x801.jpg 1200w, https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2014\/05\/Chicken_Pot_Pie-6-800x534.jpg 800w, https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2014\/05\/Chicken_Pot_Pie-6-500x333.jpg 500w, https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2014\/05\/Chicken_Pot_Pie-6.jpg 2000w\" sizes=\"auto, (max-width: 800px) 100vw, 800px\" \/><\/a><strong><\/strong><\/p>\n<p><strong>Pie Pastry<\/strong> (Recipe by King Arthur Flour)<\/p>\n<p>Ingredients:<br \/>\n2 1\/2 cups all purpose <strong>flour<\/strong> (we used wheat flour)<br \/>\n1\/4 teaspoon <strong>salt<\/strong><br \/>\n1 cup unsalted <strong>butter<\/strong>, chilled<br \/>\n1\/4 to 1\/2 cup <strong>ice water<\/strong><\/p>\n<p>Directions:<br \/>\n1. Combine the flour and salt in a mixing bowl.<br \/>\n2. Cut half the butter into pea-sized pieces and work quickly into flour mixture.<br \/>\n3. Cut in the remaining butter, this time in larger pieces (a little smaller than dime-sized)<br \/>\n4. Sprinkle about three tablespoons of of the ice water over the flour\/butter mixture and mix just until the dough begins to mass. You may need to add additional tablespoons of ice water for this to occur.<br \/>\n5. Remove the dough mass to a flat surface, divide into two equal portion and flatten into rounds. Cover in plastic wrap and let chill for at least 1\/2 hour before rolling out and creating your crust.<\/p>\n<p><a href=\"http:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2014\/05\/Chicken_Pot_Pie-5.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-13943\" alt=\"Chicken Pot Pie | Garlic, My Soul\" src=\"http:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2014\/05\/Chicken_Pot_Pie-5-801x1200.jpg\" width=\"800\" height=\"1198\" srcset=\"https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2014\/05\/Chicken_Pot_Pie-5-801x1200.jpg 801w, https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2014\/05\/Chicken_Pot_Pie-5-667x1000.jpg 667w, https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2014\/05\/Chicken_Pot_Pie-5-500x749.jpg 500w, https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2014\/05\/Chicken_Pot_Pie-5.jpg 1335w\" sizes=\"auto, (max-width: 800px) 100vw, 800px\" \/><\/a><\/p>\n<p><strong>Pot Pie<\/strong><\/p>\n<p>Ingredients:<br \/>\n6 tablespoons <strong>butter<\/strong><br \/>\n1 large <strong>onion<\/strong>, chopped<br \/>\n1 1\/2 lbs <strong>potatoes<\/strong>, cut into approx. 1&#8243; pieces<br \/>\n3-5 medium <strong>leeks<\/strong>, sliced<br \/>\n1\/2 cup dry white wine<br \/>\n6 tbsp all-purpose <strong>flour<\/strong><br \/>\n2 cups <strong>chicken broth<\/strong><br \/>\n1 cup <strong>milk<\/strong><br \/>\n5 cups <strong>chicken<\/strong>, cooked (we cut ours into cubes and cooked it in the cast iron skillet)<br \/>\n1 cup fresh green <strong>peas<\/strong><br \/>\n3 tbsp fresh<strong> parsley<\/strong>, chopped<br \/>\n2 tbsp fresh <strong>thyme<\/strong><br \/>\n<strong>salt<\/strong> and <strong>pepper<\/strong> to taste<br \/>\npie pastry (see recipe above)<br \/>\n1 <strong>egg yolk\u00a0<\/strong>(for egg wash)<\/p>\n<p>Directions:<br \/>\n1. Preheat oven to 425\u00b0F.<br \/>\n2. In a stock pot or dutch oven, melt the butter over medium-high heat.<br \/>\n3. Add onion, potatoes, leeks, salt and pepper. Cook, stirring occasionally, until tender; about 10-12 minutes.<br \/>\n4. Add white wine, stir in flour and cook for about 1 minute to combine.<br \/>\n5. Add chicken stock and milk and bring to a simmer for about 2-minutes, stirring until mixture thickens.<br \/>\n6. Add chicken, peas, parsley, thyme, salt and pepper, and combine well.<br \/>\n7. Roll out your dough and transfer to pie plate.<br \/>\n8. Fill your crust with pot pie mixture and cover the filling with your top dough.<br \/>\n9. Lift both layers of dough together and tuck to fold the top layer under. Seal the edge by crimping with your fingers or using a fork.<br \/>\n10. Cut slits in your top crust to vent<br \/>\n11. Bake for 30 &#8211; 35 minutes, checking every ten minutes to be sure your crust isn&#8217;t burning.
