Time for another breakfast post! This brunch was an all around hit with my friends. It’s a great weekend recipe when you’re looking for something a little different from plain eggs or paleo pancakes! Original recipe modified from worthypause.com<\/a>.<\/p>\n

\"Garlic<\/a><\/p>\n

Parsnip Hash<\/strong><\/p>\n

Ingredients:<\/strong>
\n2 lbs parsnips, peeled and chopped into thin fries (I prefer a thinner cut to help bring out the seasoning)
\n3-4 sprigs rosemary
\n1 tsp cumin
\n2 cloves garlic, chopped
\n1\/2 cup parsley, chopped
\n1 pint baby bella mushrooms, quartered
\na couple handfuls of kale
\nolive oil
\nsea salt and pepper to taste
\neggs<\/p>\n

Directions:<\/strong>
\nPreheat the oven to 450
\nToss cut parsnips in a large bowl with mushrooms, olive oil, garlic, rosemary, parsley, cumin, salt and pepper
\nSpread onto a single layer on a baking sheet (you may need two!)
\nBake for 10-15 minutes, stir, and bake for another 10-15 minutes
\nWhile that’s baking, make your fried eggs<\/p>\n

Spicy Avocado Sauce<\/strong><\/p>\n

Ingredients:<\/strong>
\n2-3 avocados
\nsiracha or tapatio
\n1\/2 lemon
\nsalt and pepper to taste<\/p>\n

Directions:<\/strong>
\nPuree avocados in food processor
\nAdd lemon juice, siracha and salt and pepper to taste, puree again<\/p>\n

Final Directions:<\/strong>
\nTop your hash with a fried egg and avocado sauce, and voila, you’re done!<\/p>\n
