They\u2019re everything you didn\u2019t know you wished a traditional Rice Krispies treat could be. I\u2019ve made them for friends, I\u2019ve made them for hundreds of people in my industrial bakery days, but I\u2019ve never tried to make them healthy.<\/p>\n<p><a href=\"http:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2014\/01\/scotcheroos_02.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-13108\" alt=\"Scotcheroos | Garlic, My Soul\" src=\"http:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2014\/01\/scotcheroos_02-1200x812.jpg\" width=\"800\" height=\"541\" srcset=\"https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2014\/01\/scotcheroos_02-1200x812.jpg 1200w, https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2014\/01\/scotcheroos_02-800x541.jpg 800w, https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2014\/01\/scotcheroos_02-500x338.jpg 500w, https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2014\/01\/scotcheroos_02.jpg 2000w\" sizes=\"auto, (max-width: 800px) 100vw, 800px\" \/><\/a><\/p>\n<p>Don\u2019t worry, I haven\u2019t done that this time either, but I did attempt to make them lighter on the corn syrup and just a little simpler and, lets face it, gluten-free-friendlier. Rice Krispies are one of the plethora places gluten is surreptitiously hidden \u2013 this time as barley malt \u2013 just to keep us gluten-freers on our toes.<\/p>\n<p><a href=\"http:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2014\/01\/scotcheroos_04.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-13106\" alt=\"Scotcheroos | Garlic, My Soul\" src=\"http:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2014\/01\/scotcheroos_04-1200x812.jpg\" width=\"800\" height=\"541\" srcset=\"https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2014\/01\/scotcheroos_04-1200x812.jpg 1200w, https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2014\/01\/scotcheroos_04-800x541.jpg 800w, https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2014\/01\/scotcheroos_04-500x338.jpg 500w, https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2014\/01\/scotcheroos_04.jpg 2000w\" sizes=\"auto, (max-width: 800px) 100vw, 800px\" \/><\/a><\/p>\n<p>Instead, I used <a href=\"http:\/\/shop.naturespath.com\/Koala-Crisp-Cereal\/p\/NPA-860038&amp;c=NaturesPath@EnviroKidz\">EnviroKidz Chocolate Koala Crisp Cereal<\/a>. The result: delicious. And the exact taste I know and love in just a bit crumblier a form \u2013 almost like bark or puppy chow.<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p>1 cup peanut butter (I love organic and chunky)<br \/>\n\u00bd cup agave<br \/>\n6 cups of Chocolate Koala Crisp Cereal<br \/>\n1 cup chocolate chips (I use high quality chocolate just for kicks)<br \/>\n1 cup butterscotch chips<\/p>\n<p><strong>Directions<\/strong><\/p>\n<p>1. Have a sheet pan greased and standing by.<br \/>\n2. In a large pot, melt the peanut butter and agave over low heat.<br \/>\n3. When combined and warm, turn off heat and fold in the cereal.<br \/>\n4. When well coated, turn mixture out onto sheet pan.<br \/>\n5. Spread evenly across the pan and press firmly until nicely packed. I like to use my hands and a spatula but a fork dipped in cold water works nicely as well.<br \/>\n6. Place in refrigerator.<br \/>\n7. Now to make the topping &#8211; using a double boiling method (simply a pot of boiling water with your bowl of chocolate on top), melt down the chocolate and butterscotch chips together. I let it sit until I can see it melting and then start stirring. I also always forget, but am telling you now to remember to put the butterscotch on the bottom &#8211; it melts much slower than the chocolate.<br \/>\n8. When nice and smooth, pour and spread over your chilled peanut butter and cereal mixture.<br \/>\n9. Let set. I put back in the fridge for 10-20 minutes.<br \/>\n10. Eat!
