We enjoyed our recipe so much we&#8217;ve made it multiple times now. This recipe is great for leftovers and makes about 6-8 servings.<\/p>\n<p>Through this process, we also discovered our love for <a href=\"http:\/\/www.wisegeek.org\/what-is-jicama.htm\">jicama<\/a>. It tastes a bit like a crunchy pear and once cooked, has a great taste and consistency for curry (sort of like a water chestnut).<\/p>\n<p style=\"text-align: center;\"><a href=\"http:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2014\/01\/DSC_9042.jpg\"><img loading=\"lazy\" decoding=\"async\" width=\"1200\" height=\"801\" class=\"aligncenter  wp-image-13030\" alt=\"Paleo Curry | Garlic, My Soul\" src=\"http:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2014\/01\/DSC_9042-1200x801.jpg\" srcset=\"https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2014\/01\/DSC_9042-1200x801.jpg 1200w, https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2014\/01\/DSC_9042-800x534.jpg 800w, https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2014\/01\/DSC_9042-500x333.jpg 500w, https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2014\/01\/DSC_9042.jpg 2000w\" sizes=\"auto, (max-width: 1200px) 100vw, 1200px\" \/><\/a><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p>2 cans coconut milk<br \/>\n2 cans water<br \/>\n1\/2 jicama, sliced or cubed<br \/>\n3 cups snow peas<br \/>\n4-5 medium-sized carrots, chopped<br \/>\n2 heads broccoli, chopped<br \/>\n2 jalape\u00f1os, sliced (seeds mostly removed)<br \/>\n2-3 stalks baby bok choy<br \/>\n1 can bamboo shoots<br \/>\n1 can water chestnuts<br \/>\nOlive oil to coat wok<\/p>\n<p><strong>Seasoning<\/strong><\/p>\n<p>1-2 jars of green curry paste (there&#8217;s about 3-4 tablespoons per jar)<br \/>\n1-2 tablespoon paprika<br \/>\n1-2 tablespoon curry powder<br \/>\n1-2 tablespoon garlic powder<br \/>\nCayenne pepper to taste<br \/>\nSalt (sea salt recommended) and pepper to taste<\/p>\n<p style=\"text-align: left;\"><strong><a href=\"http:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2014\/01\/DSC_9079.jpg\"><img loading=\"lazy\" decoding=\"async\" width=\"1200\" height=\"801\" class=\"aligncenter  wp-image-13028\" alt=\"Paleo Curry | Garlic, My Soul\" src=\"http:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2014\/01\/DSC_9079-1200x801.jpg\" srcset=\"https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2014\/01\/DSC_9079-1200x801.jpg 1200w, https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2014\/01\/DSC_9079-800x534.jpg 800w, https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2014\/01\/DSC_9079-500x333.jpg 500w, https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2014\/01\/DSC_9079.jpg 2000w\" sizes=\"auto, (max-width: 1200px) 100vw, 1200px\" \/><\/a>Directions<\/strong><\/p>\n<p>1. Chop\/prep all vegetables.<br \/>\n2. Coat wok with olive oil.<br \/>\n3. Add vegetables, coconut milk, water and half of your spices and curry paste.<br \/>\n4. Stir, cover and simmer for 10 minutes on high heat.<br \/>\n5. Taste testing time! Add more spice and curry paste based on your preference for heat and robust flavor.<br \/>\n6. Cover and simmer on high heat for 30 minutes.<\/p>\n<p>And that&#8217;s it! You can pour your curry over cauliflower rice or simply enjoy as is.<\/p>\n<p>*You can also add any meat to this recipe. We once tried adding grilled steak strips.
