before, so when I got one in my CSA, I knew I had to rise to the challenge.\u00a0 I\u2019m not much for pumpkin flavored baked goods, so I knew I wanted to find a savory recipe for my first pumpkin.<\/p>\n<p>Martha Stewart\u2019s recipe for <a href=\"http:\/\/www.marthastewart.com\/314073\/rigatoni-with-roasted-pumpkin-and-goat-c\">pasta with roasted pumpkin and goat cheese<\/a> caught my eye.\u00a0\u00a0 As always when I am cooking with a new ingredient, I was slightly intimidated, but it turned out there was no need to be.\u00a0 The pumpkin peeled easily and the flesh was so thin that it was easy to cut.\u00a0 I frequently cook with spaghetti squash which has thicker flesh making it much more difficult to cut and work with, so the thin flesh of the pumpkin was a welcome surprise.<\/p>\n<p><a href=\"http:\/\/garlicmysoul.com\/blog\/pasta-with-roasted-pumpkins-and-goat-cheese\/dsc_3302\/\" rel=\"attachment wp-att-12912\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-12912\" alt=\"DSC_3302\" src=\"http:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2013\/12\/DSC_3302.jpg\" width=\"1200\" height=\"800\" srcset=\"https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2013\/12\/DSC_3302.jpg 1200w, https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2013\/12\/DSC_3302-800x533.jpg 800w, https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2013\/12\/DSC_3302-500x333.jpg 500w\" sizes=\"auto, (max-width: 1200px) 100vw, 1200px\" \/><\/a><\/p>\n<p>I ended up roasting the pumpkin, shallots, and sage the night before and then I heated them up in a skillet while the pasta was cooking.\u00a0 I added crumbled bacon for some added punch (and protein).<\/p>\n<p>I would recommend cutting the pumpkin into 1\u201d chunks instead of the 2\u201d chunks that the recipe calls for.\u00a0 The larger chunks may make it easier for roasting, but more difficult for eating.\u00a0 This recipe could also be easily made with a butternut squash if you don\u2019t happen to have a pumpkin on hand.<\/p>\n<p>This is definitely a new favorite that combines complementary flavors for a hearty
