Dressed as Donatello. We love Megan because we said to her, &#8220;You want a pumpkin spice cake for your birthday, right?&#8221; and she gladly accepted without question. A friend who you can assign a cake you want to make anyway to is a true friend, indeed.<\/p>\n<p>We took our recipe from <a href=\"http:\/\/pinchmysalt.com\/pumpkin-spice-cake-recipe\/\">Pinch My Salt<\/a>, but switched it up a little.<\/p>\n<p><strong>Pumpkin Spice Cake<br \/>\n<\/strong><em>Adapted from Pinch My Salt<br \/>\n<\/em><\/p>\n<p><strong>Oven Temperature:<\/strong> 350 degrees<br \/>\n<strong>Prep Time: <\/strong>20 minutes<strong><br \/>\nBake Time:<\/strong> 45 minutes<\/p>\n<p>2 cups all-purpose <strong>flour<\/strong><br \/>\n1 cup granulated <strong>sugar<\/strong><br \/>\n1 teaspoon <strong>baking powder<\/strong><br \/>\n1 teaspoon <strong>baking soda<\/strong><br \/>\n1\/2 teaspoon <strong>salt<\/strong><br \/>\n4 teaspoons <strong>pumpkin pie spice<\/strong><br \/>\n3 large <strong>eggs<\/strong>, at room temperature<br \/>\n1\/2 cup <strong>sour cream<\/strong>, at room temperature<br \/>\n1\/2 cup <strong>kefir<\/strong><br \/>\n1 cup fresh <strong>pumpkin puree<\/strong><br \/>\n3\/4 cup <strong>coconut oil<\/strong><br \/>\n1 teaspoon <strong>vanilla<\/strong> extract<\/p>\n<p><strong>Directions<\/strong>:<\/p>\n<p>1. Preheat oven to 350 degrees. Butter and flour a Bundt pan.<br \/>\n2. In a medium bowl, sift or whisk together flour, sugar, baking powder, baking soda, salt, and spices; set aside.<br \/>\n3. In a large bowl combine eggs, sour cream, kefir, pumpkin, and coconut oil. Beat well with a hand mixer, scraping down sides with a spatula, until everything is well blended. Add flour mixture a little at a time, beating well after each addition, until everything is well combined. Scrape down sides, then blend in the vanilla extract.<br \/>\n4. Pour batter into prepared Bundt pan and bake in the center of a 350 degree oven for 35-45 minutes or until a toothpick inserted in the cake comes out clean. Let cool on wire rack for ten minutes, then invert cake onto wire rack and let cool completely.<\/p>\n<p><a href=\"http:\/\/garlicmysoul.com\/blog\/pumpkin-spice-cake\/dsc_1709\/\" rel=\"attachment wp-att-12266\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-12266\" alt=\"Pumpkin Spice Cake | Garlic, My Soul\" src=\"http:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2013\/10\/DSC_1709.jpg\" width=\"800\" height=\"534\" srcset=\"https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2013\/10\/DSC_1709.jpg 800w, https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2013\/10\/DSC_1709-652x435.jpg 652w, https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2013\/10\/DSC_1709-449x300.jpg 449w, https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2013\/10\/DSC_1709-149x100.jpg 149w\" sizes=\"auto, (max-width: 800px) 100vw, 800px\" \/><\/a><\/p>\n<p><strong>Cream Cheese Frosting<\/strong><br \/>\n<em>From <a href=\"http:\/\/www.mybakingaddiction.com\/pumpkin-bundt-cake-with-cream-cheese-frosting\/\">My Baking Addiction<\/a><\/em><\/p>\n<p>4 ounces\u00a0<strong>cream cheese<\/strong>, softened<br \/>\n1 tablespoon <strong>unsalted butter,<\/strong> softened<br \/>\n1 1\/2 cup <strong>confectioners&#8217; sugar<\/strong>, sifted<br \/>\n1\/2 teaspoon pure <strong>vanilla<\/strong> extract<br \/>\n1 tablespoon <strong>milk<\/strong><br \/>\n1\/4 teaspoon <strong>pumpkin pie spice<\/strong><\/p>\n<p><strong>Directions<\/strong>: Mix together all ingredients. If it&#8217;s too thick, add milk.
