It\u2019s fall. It\u2019s chilly, but not too cold yet here in London. It\u2019s October. It\u2019s Vegetarian Awareness Month! Last year I answered several of the FAQ\u2019s I get as a vegetarian. This year I\u2019m here to help you win the $1,000 prize offered by the people who run <a href=\"http:\/\/www.worldvegetarianday.org\/\">Vegetarian Awareness Month<\/a>. I\u2019m here to tell you how easy to be a vegetarian. There is a wide range of delicious food out there to be discovered. This month, try cooking a vegetable that scares you, like spaghetti squash. Try eating tofu instead of chicken. Try cooking with quinoa instead of rice or pasta. There are so many options. Here are a few delicious recipe ideas to get you inspired to support Vegetarian Awareness Month this October. Some of these I have previously cooked and blogged about. I eat blueberries, strawberries and raspberries with Greek yogurt, a little bit of honey, and granola almost daily. It\u2019s fast, it\u2019s simple, and it tastes so good!<\/p>\n<p><strong>Ingredients:<\/strong><br \/>\n10-12 <strong>blueberries<\/strong><br \/>\n5-8 <strong>raspberries<\/strong><br \/>\n4-6 <strong>strawberries<\/strong>, quartered<br \/>\nTwo heaping tablespoons <strong>Greek yogurt<\/strong><br \/>\nA teaspoon of <strong>honey<\/strong><br \/>\n\u00bc cup <strong>granola<\/strong><\/p>\n<p><strong>Directions:<\/strong><br \/>\nMix everything together and devour!<\/p>\n<p><strong>Lunch<\/strong> \u2013 Try my recipe for cooking <a href=\"http:\/\/garlicmysoul.com\/blog\/amica-sorella\/\">tofu<\/a> and add to your favorite rice or pasta dish instead of chicken.<\/p>\n<p><strong>Dinner<\/strong> \u2013 Busy week? The recipe makes lots of leftovers for a week of vegetarian lunches.<\/p>\n<p><strong>Dinner<\/strong> \u2013 <a href=\"http:\/\/garlicmysoul.com\/blog\/risotto-patience-is-a-virtue-but-only-for-certain-things\/\">Risotto<\/a> may get a bad reputation for taking forever to cook, but it is one of my favorite dishes. Whenever I have a random medley of vegetables, I throw everything into a risotto. Although it\u2019s impossible to survive as a paleo vegetarian due to the inherent meaty nature of the paleo diet, this crossover dish looks simply delish.<\/p>\n<p><strong>Lunch<\/strong> \u2013 Corelyn made this <a href=\"http:\/\/garlicmysoul.com\/blog\/wilted-greens-salad\/\">wilted greens salad<\/a> that just screams weekday vegetarian lunch to me. So simple and tasty.<\/p>\n<p><strong>Dinner<\/strong> \u2013 I was lucky enough to be in the GMS kitchen the day this <a href=\"http:\/\/garlicmysoul.com\/blog\/disappearing-tomato-tart\/\">tomato tart<\/a> was made. Jennie almost didn\u2019t get to photograph it, it got gobbled up so quickly.<\/p>\n<p><em><span style=\"text-decoration: underline;\">Day Five:<br \/>\n<a href=\"http:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2013\/06\/DSC_9998.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-11073\" alt=\"DSC_9998\" src=\"http:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2013\/06\/DSC_9998-652x435.jpg\" width=\"652\" height=\"435\" srcset=\"https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2013\/06\/DSC_9998-652x435.jpg 652w, https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2013\/06\/DSC_9998-449x300.jpg 449w, https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2013\/06\/DSC_9998-149x100.jpg 149w, https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2013\/06\/DSC_9998.jpg 800w\" sizes=\"auto, (max-width: 652px) 100vw, 652px\" \/><\/a><\/span><\/em><strong>Breakfast<\/strong> \u2013 French toast isn\u2019t a popular dish here in England. Try the better-known <a href=\"http:\/\/garlicmysoul.com\/blog\/why-is-everything-french\/\">eggy bread<\/a> if you want a savory alternative.<\/p>\n<p><strong>Lunch<\/strong> \u2013 Corelyn made these <a href=\"http:\/\/garlicmysoul.com\/blog\/sesame-peanut-noodles\/\">sesame peanut noodles<\/a>. I just got back from the grocery store with all the necessary ingredients for this recipe. I can\u2019t wait for lunch tomorrow.<\/p>\n<p><strong>Dinner<\/strong> \u2013 Nikki struggled with the proper egg consistency in this <a href=\"http:\/\/garlicmysoul.com\/blog\/souffle-deconstructed\/\">spinach souffl\u00e9<\/a>. My eggs never form soft peaks either! This is a tried a true favorite which will not get old even after eating it for several meals.<\/p>\n<p><strong>Lunch<\/strong> \u2013 Melissa just posted these <a href=\"http:\/\/garlicmysoul.com\/blog\/fontina-quinoa-cakes\/\">fontina quinoa cakes<\/a>. I\u2019m desperately looking for a fontina-esque cheese here in London to make these immediately.<\/p>\n<p><strong>Dinner<\/strong> \u2013 Melissa also wrote this <a href=\"http:\/\/garlicmysoul.com\/blog\/an-underutilized-squash\/\">spaghetti squash<\/a> tutorial. I can\u2019t wait for the first crop of these to show up in stores this fall. Drizzle this all over your favorite lunchtime salad.<\/p>\n<p><strong>Dinner<\/strong> \u2013 It\u2019s been a long week. You\u2019ve cooked a ton of veggie meals. You deserve a reward for all this veggie cooking you have been doing! I love a good creamy sauce on my pasta. Try this tagliatelle dish from <a href=\"http:\/\/www.jamieoliver.com\/recipes\/pasta-recipes\/tagliatelle-with-spinach-mascarpone-and-parmesan\">Jamie Oliver<\/a> (who else!) immediately. I added lemon zest and green beans which was an excellent decision. Feel free to add some more veggies too, there is plenty of sauce to go around.<\/p>\n<p><strong>Ingredients:<\/strong><br \/>\n500 grams <strong>tagliatelle pasta<\/strong><br \/>\n<strong>olive oil<\/strong><br \/>\n2 teaspoons <strong>butter<\/strong><br \/>\n4 cloves <strong>garlic<\/strong><br \/>\nA large handful of <strong>green beans<\/strong><br \/>\n250 grams of <strong>spinach<\/strong><br \/>\n1 teaspoon ground\u00a0<strong>nutmeg<\/strong><br \/>\n<strong>salt<\/strong><br \/>\n<strong>pepper<\/strong><br \/>\nzest and juice of 1 <strong>lemon<\/strong><br \/>\n120ml <strong>double cream<\/strong><br \/>\n250 grams <strong>mascarpone cheese<\/strong><br \/>\ngrated <strong>parmesan cheese<\/strong><\/p>\n<p><strong>Directions:<\/strong><br \/>\nIn a pot, boil pasta until al dente. In a frying pan, saut\u00e9 the garlic, green beans, and spinach (a few handfuls at a time until it wilts) with the olive oil and butter. Add nutmeg and salt and pepper to taste. Once everything has cooked nicely and the liquid has been absorbed, add the lemon zest and some juice, reserving a bit for later on. (Trust me!) Add the mascarpone, double cream and two spoonfuls of cooking water from the pasta. Once everything has melted and simmered, add the cooked pasta. Toss until everything is mixed and coated. Grab a heaping helping for yourself and top with lemon juice and grated parmesan cheese.<\/p>\n<p>Happy vegetarian eating this month!
