In honor of one last great summer bounty at the farmer&#8217;s market, we decided to bring you a recipe to use up those zucchini, heirloom tomatoes, basil, and corn.<\/p>\n<p><a href=\"http:\/\/garlicmysoul.com\/blog\/end-of-summer-veggie-pasta\/dsc_6566\/\" rel=\"attachment wp-att-12003\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-12003\" alt=\"Late Summer Pasta | Garlic, My Soul\" src=\"http:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2013\/09\/DSC_6566.jpg\" width=\"800\" height=\"534\" srcset=\"https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2013\/09\/DSC_6566.jpg 800w, https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2013\/09\/DSC_6566-652x435.jpg 652w, https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2013\/09\/DSC_6566-449x300.jpg 449w, https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2013\/09\/DSC_6566-149x100.jpg 149w\" sizes=\"auto, (max-width: 800px) 100vw, 800px\" \/><\/a><\/p>\n<p>This pasta was basically an ode to everything that&#8217;s great in the world of summer veggies, and can be adapted to whatever you have lying around, dying to be used at the end of summer!<\/p>\n<p><strong>Ingredients<\/strong>:<\/p>\n<p>1\/2 cup <strong>basil<\/strong><br \/>\n1 cup <strong>heirloom<\/strong>\u00a0<strong>cherry tomatoes<\/strong><br \/>\n1 cup <strong>corn<br \/>\n<\/strong>2-3 cloves <strong>garlic<\/strong><br \/>\n1 medium <strong>zucchini<\/strong> (or baby zucchini, about 5)<br \/>\njuice of one <strong>lemon<\/strong>, and zest<br \/>\n1 cup shaved <strong>parmesan<\/strong><br \/>\n1 pound <strong>pasta<\/strong> (we used a small kind, it makes for better bites)<br \/>\n<strong>s\/p<\/strong><\/p>\n<p><strong>Directions<\/strong>:<\/p>\n<p>1. Make pasta according to the box instructions.<br \/>\n2. Meanwhile, chop garlic and basil, half tomatoes, shave or chop zucchini, juice and zest lemon.<br \/>\n3. If you&#8217;re using frozen corn, throw into the pasta water for last 2 minutes of the cooking.<br \/>\n4. Drain pasta, reserving 1\/2 cup water.<br \/>\n5. Mix water with lemon juice, toss with pasta. Add veggies, parmesan cheese, and mix well.
