But &#8211; beware, they will dye your cutting boards. You can use golden beets instead, to avoid this, or use a plastic cutting board and make sure to wash it right away.<\/p>\n<p><strong>Beet Hummus<br \/>\n<\/strong><em>Adapted from Simply Recipes<\/em><strong><br \/>\n<\/strong><\/p>\n<p>1\/2 pound <strong>beets<\/strong> (about 4 medium sized beets), scrubbed clean, cooked, peeled, and cubed (steam &#8217;em until a fork comes out clean)<br \/>\n2 tbsp <strong>tahini<br \/>\n<\/strong>1\/4 cup <strong>chick peas<\/strong><br \/>\n5 tbsp <strong>lemon juice<\/strong><br \/>\n3 cloves\u00a0<strong>garlic<\/strong>, chopped<br \/>\n1 tbsp ground <strong>cumin<\/strong><br \/>\n1 tbsp <strong>lemon zest<\/strong> (zest from approx. 2 lemons)<br \/>\n<strong>goat cheese<\/strong><br \/>\n<strong>s\/p<\/strong><\/p>\n<p><strong><a href=\"http:\/\/garlicmysoul.com\/blog\/?attachment_id=11492\" rel=\"attachment wp-att-11492\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-11492\" alt=\"Beet Hummus | Garlic, My Soul\" src=\"http:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2013\/07\/DSC_5271.jpg\" width=\"800\" height=\"534\" srcset=\"https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2013\/07\/DSC_5271.jpg 800w, https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2013\/07\/DSC_5271-652x435.jpg 652w, https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2013\/07\/DSC_5271-449x300.jpg 449w, https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2013\/07\/DSC_5271-149x100.jpg 149w\" sizes=\"auto, (max-width: 800px) 100vw, 800px\" \/><\/a><\/strong><\/p>\n<p>Mix all your ingredients together, and adjust seasonings to taste. Then, chill and serve cold with crackers or veggies or chips. It&#8217;s simple, it&#8217;s beautiful, it&#8217;s delicious, and it&#8217;s gluten free!
