I substitute parmesan cheese with \u00bd of an avocado.<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>2 cups fresh chopped <strong>basil<\/strong> leaves<br \/>\n\u00bd cup extra virgin <strong>olive oil<\/strong><br \/>\n1\/3 cup <strong>pine nuts<\/strong><br \/>\n3 <strong>garlic<\/strong> cloves<br \/>\n\u00bd <strong>avocado<\/strong> diced<br \/>\n<strong>Salt<\/strong> and <strong>pepper<\/strong> to taste<br \/>\n1 <strong>zucchini<\/strong><br \/>\n5-7 frozen <strong>shrimp<\/strong><br \/>\n<strong>Red pepper<\/strong> (Cayenne)<br \/>\nCoconut <strong>oil<\/strong> or olive oil<br \/>\n<strong>1\/2 lemon<\/strong><\/p>\n<p><strong>Directions:<\/strong><\/p>\n<p><strong> <a href=\"http:\/\/garlicmysoul.com\/blog\/?attachment_id=10498\" rel=\"attachment wp-att-10498\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-10498\" alt=\"Paleo Zucchini Pasta with Shrimp and Pesto | Garlic, My Soul\" src=\"http:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2013\/04\/paleo_02.jpg\" width=\"800\" height=\"534\" srcset=\"https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2013\/04\/paleo_02.jpg 800w, https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2013\/04\/paleo_02-652x435.jpg 652w, https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2013\/04\/paleo_02-449x300.jpg 449w, https:\/\/garlicmysoul.com\/blog\/wp-content\/uploads\/2013\/04\/paleo_02-149x100.jpg 149w\" sizes=\"auto, (max-width: 800px) 100vw, 800px\" \/><\/a><br \/>\nPesto Sauce<\/strong><\/p>\n<p>1. Put chopped basil, pine nuts, and garlic into a blender or food processor and mix. I used a blender and I had no problems.<br \/>\n2. Add olive oil and avocado. Blend again until creamy.<br \/>\n3. Rinse zucchini, then slice long ways and then cut into spaghetti-like strips.<br \/>\n2. Put in microwave-safe dish and microwave for 1 minute. Zucchini should be soft.<\/p>\n<p>One very important aspect of paleo eating is having enough food on hang to cook a healthy meal on any given day. Put frozen shrimp in pan and heat until de-thawed.<br \/>\n2. Strain the shrimp and rinse the pan.<br \/>\n3. Add coconut oil or olive oil, enough to grease the pan. Squeeze in lemon and add shrimp back in.<br \/>\n4. Cook on medium heat. A great paleo-friendly dish. This recipe will make enough pesto to have leftovers. I recommend making the zucchini and shrimp on an as-needed basis since it is very simple to make when you already have your pesto handy, but you can certainly make more and have leftovers as well!<\/p>\n<p>I\u2019ll leave you with a great tip from <a href=\"paleodietlifestyle.com\">Paleo Diet Lifestyle<\/a>:<\/p>\n<p><em>\u201cIce cube trays make a good vessel to freeze the finished pesto. Simply pour the pesto in the small cubes and freeze.
