Green Ginger Popsicles

Summary

These popsicles are very earthy and spicy - think smoothie in a popsicle. As a result, if you want to sweeten them a bit, add apple sauce or a handful of berries.

Ingredients

  • 1/2 avocado
  • 1.5 cup coconut milk
  • 1-2 handful spinach
  • 1 teaspoon turmeric
  • 1 tablespoon grated ginger
  • 1/3 cup apple sauce (optional)

Directions

  1. Pour milk and spinach in a blender. Mix well.
  2. Add avocado, turmeric, and half the ginger. Mix well, and taste, adjusting the ginger if necessary.
  3. Add apple sauce if desired and mix well. Pour into popsicle molds and let freeze at least five hours or overnight.
