30 in 30: Curried Egg Salad

Cook time: 15 minutes
Servings: 4

Ingredients:

8 hard boiled eggs
6 green onions, chopped (green and white parts)
2 tsp fresh thyme
3 tbsp mayo
2 tsp curry powder
1 tsp lemon juice
salt/pepper to taste
paprika (garnish)

Directions:

1. Hard boil your eggs: place in a pot, covered with just enough water to cover them. Bring to a boil, remove from heat and allow to sit, covered, for 15 minutes. Rinse with cold water and store until ready to make egg salad.
2. Shell and dice eggs; chop green onions and thyme.
3. Combine mayo, curry powder, lemon juice.
4. Mix with eggs, green onions, and thyme, salt and pepper to taste. Garnish with pinch of paprika. Serve on crusty bread, crackers, or toast.
