It’s Wednesday, and it’s Popsicle Week, and I’m here to reveal my favorite flavor: lime. Also known as “green color,” I always preferred the green ice pops as a kid. Purple was a last resort if nothing else was left (aka grape) and sometimes I would have a red or pink one (usually strawberry or some berry flavor) but lime was where it was at.

Lemon-lime was also the flavor of the ice pop shaped like a shark that you could get from the ice cream truck that came to Rocky Neck State Beach, where I spent a significant portion of my childhood summer days. There was nothing like a book, a tuna fish sandwich, and a great white shark pop.

I am here to tell you that lime ice pops are some of the easiest to make, and that they taste just like they should, preservatives left out, that is.  The recipe is here, but all you need are limes, honey, and water. And, I’ll be honest with you, I ended up using one drop of food coloring because I just wanted that deep green!
